
Baked Spicy Turkey Meatballs
Being a mom has given me an appreciation of time in the kitchen since I don’t get too much of it. I like quick meals that are delicious and healthy. These meatballs are high in protein because the turkey is lean and they have a lot of flavor because, duh, I made them.
Time:
Prep time: 5 mins
Bake time: 30 mins
Total: 35 mins
Ingredients:
Ground Turkey (99% lean)
Medium onion (minced)
1/2 jalapeno (minced)
1/4 tsp dried oregano
1/4 tsp dried rosemary
1/4 tsp dried thyme
4 cloves garlic (minced)
1/4 tsp basil
1 tsp salt
1 tsp black tellicherry pepper
1 TSP Trader Joe’s 21 Seasoning Salute
1/2 cup mozzarella cheese
1 cup chipotle panko breadcrumbs
1/2 cup milk
2 eggs
1 TSP red pepper flakes (we like it spicy but you can put less)
Directions:
1. Beat eggs with milk in mixing bowl.
2. Add in the rest of the ingredients to mixing bowl.
3. Make golf ball sizes out of mixture.
4. Lay meatballs 1.5 inches apart on aluminum foil.
5. Bake at 350 degrees for 30 minutes. After 15 minutes, turn all meatballs around to ensure they are fully cooked.
This shows what the mixture should look like right before you add the meat in. Please don’t add extra bread crumbs. This recipe has been tested several times and I can guarantee you that if you add more breadcrumbs, your meatball will be dry. And that’s just disgusting.

The great thing about these meatballs is that you can have them with spaghetti, in hoagies, or even just by themselves. They are so flavorful that you don’t need all the extra carbs, but I LOVE SPAGHETTI. You can freeze them for up to 3 months. Because they’re 99% lean and baked, they are super healthy! You can prep them the night before and leave them in the fridge in a tray. When you come home from work, all you have to do is pre-heat the oven and hang out till it’s done!
